    Prepare the Steak

    Take the Delmonico steak out of the refrigerator and let it come to room temperature for about 30 minutes. Pat it dry with paper towels.

    Season the Steak

    Generously season both sides of the steak with kosher salt and black pepper, pressing it into the meat.

    Heat the Pan

    In a large cast-iron skillet, heat the olive oil over medium-high heat until it shimmers but isn't smoking.

    Sear the Steak

    Add the steak to the skillet and sear for about 4-5 minutes on one side, until a crust forms. Flip the steak and sear the other side for another 4-5 minutes.

    Add Rosemary (Optional)

    If using, add the fresh rosemary sprig to the skillet during the last minute of cooking for added flavor.

    Check Doneness

    Use a meat thermometer to check for doneness: 130°F for medium-rare, 140°F for medium. Adjust cooking time as needed.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for at least 5-10 minutes before slicing.

    Serve

    Slice against the grain and serve with your favorite sides.
