Creamed Spinach

Method

Preparation

  1. 1

    Prepare the Spinach

Wash the spinach thoroughly and remove any tough stems. In a large pot, bring water to a boil and blanch the spinach for 2-3 minutes. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and chop coarsely.

  2. 2

    Sauté Garlic

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

  3. 3

    Make the Cream Sauce

Lower the heat and add the heavy cream and cream cheese to the skillet, stirring until the cream cheese has melted and the mixture is smooth.

  4. 4

    Combine Spinach and Sauce

Add the chopped spinach to the cream sauce and stir well to combine. Cook for about 5 minutes, allowing the spinach to absorb the flavors.

  5. 5

    Add Cheese and Seasonings

Stir in the grated Parmesan cheese and nutmeg. Season with salt and black pepper to taste. Cook for an additional 2-3 minutes until heated through.
