    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, transfer the rice to a large bowl.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Allow the rice to cool to room temperature.

    Prepare the Filling

    In a mixing bowl, combine the diced yellowtail and sriracha sauce. Mix well to coat the fish.

    Make the Crab Topping

    In another bowl, mix the shredded imitation crab meat with mayonnaise until well combined.

    Assemble the Rolls

    Place a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top. Layer the yellowtail mixture, avocado slices, and tempura flakes in the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to shape it into a tight roll. Seal the edge with a little water.

    Cut the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for a clean finish.

    Add Toppings

    Top each sushi piece with a small amount of the crab mixture and a sprinkle of tobiko.
