Instructions
- 1
Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan.
- 2
Bake the crust
Bake the crust in the preheated oven for about 8-10 minutes or until lightly golden. Remove from the oven and set aside to cool.
- 3
Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and mix until well combined. Add the sour cream and vanilla extract, mixing until smooth.
- 4
Add eggs
Add the eggs one at a time, mixing gently after each addition until just combined. Do not overmix.
- 5
Pour filling into crust
Pour the cream cheese filling over the cooled crust, smoothing the top with a spatula.
- 6
Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center slightly jiggles.
- 7
Cool and chill
Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. Afterward, refrigerate for at least 4 hours or overnight before serving.
