Prepare the Quails

Clean and rinse the quails under cold water. Pat them dry with paper towels and season with salt and black pepper.

Fry the Quails

In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium-high heat. Add the quails and fry for about 4-5 minutes on each side, until golden brown. Remove the quails from the skillet and set aside.

Make the Onion Sauce

In the same skillet, add the remaining olive oil and butter. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent. This should take about 3-4 minutes.

Combine and Simmer

Pour in the chicken broth, stirring to combine. Return the fried quails to the skillet, cover, and let simmer for about 10 minutes to let the flavors meld.

Finish and Serve

Once cooked, sprinkle fresh herbs on top. Serve the quails hot with the onion sauce drizzled over them.
