    Measure and prepare salt

    Measure 2 cups coarse sea salt (or kosher). If you prefer a slightly finer finish, measure 2 tablespoons of fine finishing sea salt and set aside to blend at the end.

    Ensure the salt is completely dry before blending. If it feels damp, spread it on a sheet pan and dry in a warm oven (lowest setting, about 90–120°F / 35–50°C) for 10–15 minutes, stirring once, then cool completely.

Truffle & Enhancers

    Combine the 2 cups of dry salt and 2 tablespoons dried black truffle powder in a bowl or food processor. If using a food processor, pulse 6–10 short times just to distribute the powder evenly into the salt (avoid long runs — you want mixed, not pasty). If mixing by hand, sprinkle the powder over the salt and stir thoroughly until uniform.

    Optional: add truffle oil (for boosted aroma)

    If using truffle oil, add 1 teaspoon total in small increments: drizzle about 1/4 teaspoon at a time while stirring to distribute evenly. After each addition, break up any clumps and sprinkle the mixture out on a rimmed baking sheet in a thin layer to air-dry for 1–2 hours (or place in the oven at the lowest temperature with the door cracked for 30–60 minutes) until the salt feels free-flowing again. Note: truffle oil will make the salt less shelf-stable than the dried-powder-only method; store refrigerated for longer life if you used oil.

    Optional: using fresh truffle (preserving method)

    If using fresh truffle (approximately 10 g), finely mince or grate it and fold into the measured salt. Spread the truffle-salt thinly on a baking sheet and dehydrate at the oven's lowest setting (50–90°C / 120–200°F depending on your oven) with the door slightly ajar for 30–60 minutes, stirring every 10–15 minutes. The goal is to remove surface moisture and let the truffle aroma infuse the salt without cooking it. Allow to cool completely. Note: salt mixed with fresh truffle should be stored in the refrigerator and used within 2–3 weeks for best quality.

    Optional: seasoning tweak

    If you like a faint peppery note, add 1/4 teaspoon freshly ground black pepper and mix thoroughly. If you reserved 2 tablespoons finishing salt, stir that in now for a combination of texture and truffle aroma.

    Final milling (optional)

    For a finer, more integrated truffle salt, pulse the dried mixture briefly (3–6 short pulses) in a spice grinder or food processor until you reach the desired granularity. Avoid over-grinding into a paste.

    Package and label

    Transfer the finished truffle salt to a clean, dry airtight jar. Press out any air, close the lid, and label with the date and method used (dried powder, oil, or fresh truffle).

    Storage and shelf life

    If made with only dried truffle powder: store in a cool, dark pantry for up to 6–12 months for best flavor. If you used truffle oil: store in a cool, dark place and use within 2–3 months (refrigerate if you want extended life). If you used fresh truffle: refrigerate and use within 2–3 weeks. Always keep salt dry and use a dry spoon to dispense.
