Sweet Potato Fries

    Preheat

    Preheat oven to 220°C (425°F). Line a large baking sheet with parchment paper or a silicone mat. If you have two baking sheets, arrange them so you can spread the fries in a single layer.

    Prep the potatoes

    Wash and, if you prefer, peel the sweet potatoes. Cut each potato into evenly sized sticks about 1/3–1/2 inch (8–12 mm) thick. Try to make pieces uniform so they cook evenly.

    Soak to remove starch

    Place the cut fries in a large bowl and cover with cold water. Soak for 20–30 minutes to remove surface starch (this helps them crisp).

    Dry thoroughly

    Drain the fries and spread them on a clean kitchen towel or several layers of paper towels. Pat completely dry. Removing moisture is essential for crisping.

    Coat with cornstarch and oil

    Return the dried fries to a dry bowl. Sprinkle 1 tablespoon cornstarch over the fries and toss to coat evenly. Add 2 tablespoons olive oil and toss again until each fry is lightly coated.

    Add seasonings

    In a small bowl combine 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon cayenne, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Sprinkle the seasoning mix over the oiled fries and toss until evenly seasoned.

    Arrange and bake

    Spread the fries in a single layer on the prepared baking sheet with space between pieces (crowding causes steaming). Bake in the preheated oven for 12–15 minutes.

    Flip and finish baking

    Remove the sheet, use a spatula to flip each fry, then return to the oven and bake another 8–12 minutes until edges are browned and fries are tender inside. Oven times vary — watch for golden edges and slight blistering.

    Crisp under broiler (optional)

    If you want extra crispness, switch the oven to broil for 1–2 minutes at the end — watch closely to avoid burning.

    Finish and serve

    Transfer fries to a serving bowl or platter. Toss with the chopped fresh parsley and squeeze the lime wedges over the fries to taste. Serve immediately with the prepared dip or your preferred sauce.

    Make the dip

    In a small bowl combine 1/2 cup mayonnaise, 2 tablespoons Greek yogurt or sour cream, 1 minced garlic clove, and 1 teaspoon lemon juice. Stir until smooth.

    Season the dip with 1/4 teaspoon salt, 1/4 teaspoon black pepper and (if using) 1/4 teaspoon smoked paprika. Taste and adjust salt, pepper or lemon juice to your preference.

    For best flavor let the dip rest in the refrigerator for 10–15 minutes to let the garlic and lemon meld, then serve alongside the hot fries.
