Soak to remove starch
Place the cut fries in a large bowl and cover with the 6 cups cold water. Stir in the 1 tbs kosher salt. Let soak at room temperature for 30 minutes (or refrigerate and soak up to 2 hours). Soaking removes excess surface starch and helps the fries crisp.

Drain and dry
After soaking, drain the fries in a colander and rinse briefly under cool running water. Spread them on clean kitchen towels or paper towels and pat very dry. Removing surface moisture is critical for crisping; let them air-dry a few minutes if needed and re-dry with towels until no visible moisture remains.

Preheat oven and prepare pan
Position a rack in the upper-middle of the oven and preheat to 230°C (450°F). Line a baking sheet with parchment paper or lightly oil it so fries don't stick; use a rimmed sheet to catch any oil.

Toss with oil and dry rub
In a large bowl, combine the 3 tbs vegetable oil, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp smoked paprika, 1 tsp freshly ground black pepper and 1 tsp fine sea salt. Add the dried potato wedges and toss thoroughly so each wedge is evenly coated. The baking powder helps create a crisper exterior when baked.

Arrange and bake
Spread the fries in a single layer on the prepared baking sheet with space between pieces (crowding will steam them). Bake at 230°C (450°F) for 15–18 minutes, then use a spatula to flip each fry. Continue baking another 12–18 minutes until the fries are deep golden and crisp at the edges. Total bake time will be about 30–36 minutes depending on thickness and oven. Watch for even browning—rotate the pan if your oven has hot spots.

Finish and adjust seasoning
Remove fries from the oven and transfer to a serving bowl or sheet. While still hot, taste and if needed sprinkle an additional pinch of fine sea salt to taste. Toss briefly so seasoning distributes.
