    Preheat and prep potatoes

    Preheat oven to 425°F (220°C). Scrub the russet potatoes and pat dry. Pierce each potato 6–8 times with a fork.

    Rub each potato evenly with olive oil, then sprinkle with 1 tbs kosher salt and 1 tsp black pepper, rubbing the seasoning into the skins.

    Place potatoes directly on the oven rack (put a rimmed baking sheet on the rack below to catch drips). Bake until skins are crisp and a skewer or knife slides into the center easily, about 60–75 minutes depending on size.

    Finish and prepare toppings

    During the last 8 minutes of baking, cook the bacon in a skillet over medium heat until crisp (about 6–8 minutes); transfer to paper towels and chop into bite-size pieces once cool. Remove potatoes from oven and keep warm.

    When ready to assemble, make a lengthwise cut on top of each potato and press the ends to open. Fluff the insides with a fork and stir in 1 tbs butter into each potato, then taste and add more salt/pepper if desired (use reserved butter if needed).

    Cut and marinate

    Cut the chicken breasts into bite-size strips or pieces suitable for piling onto a potato. In a bowl, whisk together buttermilk and 1 egg. Submerge the chicken pieces in the buttermilk mixture and refrigerate for at least 20 minutes (up to 2 hours).

    Make dredge

    In a shallow bowl or rimmed baking sheet, combine 1.5 cups all-purpose flour, 0.25 cups cornstarch, 1 tsp baking powder, 1 tbs paprika, 1 tsp garlic powder, 1 tsp onion powder, 0.5 tsp cayenne, 1 tbs kosher salt, and 1 tsp black pepper. Mix thoroughly.

    Dredge chicken

    Remove chicken from buttermilk, letting excess drip off, and press pieces into the flour mixture to coat completely. For extra crispness, dip coated pieces back into the buttermilk briefly and then re-coat in the flour mixture (double dredge). Place coated pieces on a rack while heating oil.

    Heat oil and fry

    Pour about 1½–2 cups vegetable oil into a 10–12 inch skillet (or use a deep pot) to a depth of about 1 inch. Heat oil over medium-high to 350°F (175°C). When oil is hot, fry chicken in batches without crowding, 3–5 minutes per side, until golden brown and an instant-read thermometer reads 165°F (74°C). Transfer to a wire rack or paper towels to drain.

    Keep the fried chicken warm in a low oven (200°F / 95°C) while finishing potatoes and sauce.

Sauce / Finish

    Make buffalo drizzle

    In a small saucepan or microwave-safe bowl, combine 0.25 cups hot sauce with 2 tbs unsalted butter. Gently heat until butter is melted and sauce is combined; set aside.

    Prepare ranch

    If desired, thin the ranch dressing with 1–2 tbs water or buttermilk to a pourable consistency for drizzling. Keep ranch chilled until assembly.

Assembly

    Build each loaded potato

    Open each baked potato and fluff the interior. Add 1 tbs unsalted butter into each potato and mix gently. Divide shredded cheddar evenly among the 4 potatoes (about 0.5 cup cheese per potato).

    Top each potato with a generous portion of fried chicken pieces (about 4 oz / 110 g cooked chicken per potato). Sprinkle chopped bacon evenly over the potatoes.

    Drizzle each loaded potato with ranch (about 3 tbs per potato) and then a smaller drizzle of the buffalo sauce (about 1 tbs per potato) if using. Garnish with chopped chives and sliced green onions.
