Combine base ingredients
In a medium mixing bowl, add 1 cup mayonnaise, 1/2 cup ketchup and 2 tbs Dijon mustard. Whisk vigorously until completely smooth and uniform in color.

Add sweet and acidic elements
Stir in 2 tbs honey, 1 tbs apple cider vinegar and 1 tbs fresh lemon juice into the mayonnaise mixture. If the honey is very thick, warm it for 8–10 seconds in the microwave or stir with 1 tsp warm water first so it blends evenly. Whisk until the mixture is homogenous.

Prepare garlic
Finely mince the 2 garlic cloves. Sprinkle a small pinch of the kosher salt onto the garlic and use the side of your knife to press and mash it into a paste — this helps distribute flavor without raw harshness.

Add spices
Add the mashed garlic paste to the bowl, then add 1 tsp smoked paprika, 1/2 tsp ground cumin, 1/4 tsp cayenne pepper, 1/2 tsp freshly ground black pepper and the remaining 3/4 tsp kosher salt. Whisk thoroughly to incorporate. Taste after mixing; allow the sauce to sit at room temperature for 5 minutes to let the garlic mellow and spices bloom.

Finish and emulsify
Stir in 1 tsp Worcestershire sauce, 1 tsp hot sauce and 1 tbs extra-virgin olive oil. Add 2 tbs finely chopped parsley and 1 tbs chopped chives (if using). Whisk until smooth. If the sauce is too thick for your use, whisk in up to 1 tbs cold water or milk, 1 tsp at a time, until you reach desired consistency.

For an ultra-smooth, restaurant-style finish, transfer the sauce to a small blender or use an immersion blender and pulse for 8–12 seconds. This also helps fully emulsify the olive oil.

Storage and serving
Use the Coop Sauce as a dip, spread, or glaze for grilled chicken, sandwiches, fries or roasted vegetables. Store covered in the refrigerator for up to 7 days; stir or shake before using. Bring to room temperature briefly before serving if it firms up in the fridge.
