    Prepare the beef

    If your beef is not pre-sliced, freeze a slab for 20–30 minutes to firm it, then slice very thinly against the grain into 1/16–1/8-inch slices. Place the sliced beef in a bowl and season with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper; toss to distribute evenly.

    Heat the pan

    Place a large cast-iron skillet or heavy griddle over high heat. When hot (you should see faint wisps of smoke), add 2 tablespoons vegetable oil and swirl to coat. The pan must be hot so the beef sears rather than steams.

    Cook the beef

    Add half the seasoned beef, spreading into an even layer. Let it sear without overcrowding for 30–45 seconds, then use a spatula to chop and turn the meat, continuing to break it up and spread it across the pan until mostly cooked and slightly browned (about 2–3 minutes). Transfer the cooked portion to a plate and repeat with the remaining beef, adding a touch more oil if needed. Return all beef to the pan, add 1 tablespoon Worcestershire sauce, toss to coat, and remove from heat. Keep warm while finishing other components.

Onions

    Slice and heat

    While the beef rests, heat a separate large skillet over medium heat. Add 1 tablespoon vegetable oil and let it warm for 30 seconds.

    Sauté the onions

    Add the 2 medium thinly sliced yellow onions and 1/2 tsp kosher salt to the skillet. Cook, stirring every 1–2 minutes, until soft and golden — about 8–12 minutes for softened, 12–18 minutes for more deeply browned, stirring more frequently toward the end to prevent burning. If onions are browning too quickly, lower heat slightly. When they reach your desired color and sweetness, remove from heat and keep warm.

Sauce

    Warm the Cheez Whiz

    Transfer 2 cups of Cheez Whiz to a small saucepan and warm over low–medium heat, stirring frequently until smooth and pourable (3–5 minutes). If the sauce is too thick, whisk in up to 2 tablespoons whole milk, 1 tablespoon at a time, until you reach a good drizzling consistency. Taste and keep warm on the lowest heat, stirring occasionally. Alternatively, microwave in 20–30 second bursts, stirring between bursts, until pourable.

Rolls & Finish

    Toast the rolls

    Split the 4 hoagie rolls lengthwise without cutting all the way through. Spread 1/2 tablespoon softened butter on the inside of each roll. Place buttered side down on a hot skillet or griddle over medium heat and toast until golden, 1–2 minutes. Remove and keep warm.

    Assemble cheesesteaks

    Divide the cooked beef evenly among the 4 rolls (about 8 oz beef per roll). Top each portion with a generous spoonful of the warm sautéed onions. Drizzle desired amount of warm Cheez Whiz over the onions and beef (or serve the Cheez Whiz on the side for dipping). Close the roll and serve immediately.

    Serve

    Serve hot. Offer extra salt, pepper, and additional Cheez Whiz at the table. Leftover beef and onions can be refrigerated for up to 3 days; reheat gently before assembling.
