Partially freeze and slice
Place the whole ribeye in the freezer for 25–35 minutes until it is firm but not frozen solid. This makes thin slicing easier. Using a sharp knife, slice the ribeye across the grain as thin as possible (aim for 1–2 mm). If you prefer, cut slices into shorter 2–3 inch lengths for easier shredding during cooking.

Cook the beef
Heat a large heavy skillet or cast-iron griddle over high heat until very hot. Add 1 tbs vegetable oil and swirl. Add half the seasoned beef in a single layer — don't overcrowd. Let the beef sear for 30–45 seconds, then use tongs or a spatula to press and flip pieces so they make good contact with the surface. Cook 1–2 minutes total until browned but still tender. Remove to a plate and repeat with remaining beef, adding up to 1 tbs more oil if pan becomes dry. Return all beef to the hot pan briefly, add 1 tbs Worcestershire sauce and 60 ml beef stock (if using) to deglaze, scrape up fond, and cook until liquid reduces slightly (15–30 seconds). Keep beef hot and loosely covered.

Caramelize onions and peppers
Heat a separate large skillet over medium heat. Add 1 tbs vegetable oil. Add the sliced onions and a pinch (0.5 tsp) of kosher salt; cook, stirring occasionally, for 6–8 minutes until soft and beginning to caramelize. Add the sliced green pepper and mushrooms (if using). Continue cooking 6–8 more minutes until the peppers are softened and onions are deeply golden. Taste and season with a little extra salt and pepper if needed. Remove vegetables to a bowl and keep warm. You can cook the vegetables in the same pan you'll use for bread for convenience.

Prep and toast rolls
Split the hoagie rolls lengthwise but leave a hinge if preferred. Spread a thin layer of the unsalted butter (1 tbs total divided) on the cut sides. Heat a clean skillet or the griddle over medium heat and toast the rolls, buttered side down, until golden and crisp, about 1–2 minutes. Remove and keep warm.

Melt cheese on beef
Return the cooked beef to a clean hot skillet in an even layer. Top the beef with the warmed caramelized vegetables. Lay 2 slices of provolone over the beef and vegetables per sandwich (or 1 provolone + 1 American slice per roll if using). Cover the pan with a tight-fitting lid or a large sheet pan for 30–60 seconds to trap steam and melt the cheese evenly.

Assemble the cheesesteak
Open a toasted roll and spoon a quarter of the cheesy beef and vegetable mixture into each roll. If desired, add a splash of reserved au jus or extra Worcestershire for moistness. Serve immediately while hot.

Use oils and adjust seasoning
Use the 2 tbs vegetable oil during high-heat searing (1 tbs per cook batch) and 1 tbs butter for toasting rolls. The salt, pepper, and garlic powder are applied to the beef before searing; taste vegetables as they cook and adjust seasoning with small pinches of salt and pepper. Worcestershire is added near the end of beef cooking to boost savory flavor; beef stock (60 ml) is optional to create a light jus and deglaze the pan.
