    Preheat and prepare

    Preheat your oven to the temperature indicated on the frozen fries package (typically 220°C / 425°F). Line a large baking sheet with parchment or foil and spread fries in a single layer so they are not overcrowded.

    Toss the frozen fries with the vegetable oil, kosher salt, and black pepper in a large bowl or directly on the baking sheet so they get a light coating. This helps them crisp up in the oven.

    Bake until crisp

    Bake the fries according to package directions, turning once halfway through, until golden and crisp (typically 18–25 minutes depending on thickness). If you want extra crispiness, finish under a hot broiler for 1–2 minutes while watching closely.

Quick Pickled Red Onions

    While the oven is heating, make the quick pickles: combine apple cider vinegar, water, sugar, and kosher salt in a small saucepan and bring to a simmer just until sugar dissolves (about 1–2 minutes).

    Place the thinly sliced red onion in a heatproof bowl or jar and pour the hot vinegar mixture over the onion. Press the onion down so it’s submerged. Let sit at least 10–15 minutes at room temperature (it will be usable in about 10 minutes but is better if cooled 20+ minutes). Reserve the pickling liquid in the jar for storage.

BBQ Pulled Pork

    Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the finely chopped yellow onion and cook 3–4 minutes until softened. Add the minced garlic and cook 30–45 seconds until fragrant.

    Add the precooked pulled pork to the skillet and break it up with a spatula. Stir to combine with the onion and garlic and cook 2–3 minutes to warm through.

    Add BBQ sauce

    Pour the 3/4 cup of BBQ sauce over the pork, stir to coat evenly, and simmer gently 3–5 minutes until the pork is hot and the sauce is a bit reduced and sticky. Taste and adjust seasoning; add a pinch of salt or additional BBQ sauce if needed. Keep warm on low heat until assembly.

    When fries are crispy, remove them from the oven and reduce oven temperature to broil (or use the broiler setting). Pile the hot fries on the baking sheet into an even layer and immediately scatter the shredded sharp cheddar evenly over the fries.

    Spoon the warmed BBQ pulled pork over the cheese-covered fries in an even layer. Place the baking sheet under the broiler for 1–3 minutes, watching closely, until the cheese is melted and bubbling and the pork edges are slightly caramelized.
