    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Add minced garlic and cook for an additional minute until fragrant.

    Mix the Sauce

    In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper.

    Combine Everything

    Add the drained spaghetti to the skillet with pancetta and garlic. Remove from heat and quickly pour the egg mixture over the hot pasta, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired creaminess is achieved.

    Serve

    Season with additional salt and black pepper to taste. Serve immediately with extra Parmesan cheese on top.
