Cook the Rice
In a large saucepan, bring the vegetable broth to a boil. Add the Arborio rice, reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is creamy and tender. Remove from heat and let it cool.

Sauté Aromatics
In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent and fragrant, about 3-4 minutes. Stir this mixture into the cooled rice.

Mix in Cheese
Add the grated Parmesan cheese, salt, and black pepper to the rice mixture, stirring to combine well.

Form the Balls
Take a small handful of the rice mixture and flatten it in your palm. Place a cube of mozzarella cheese in the center and mold the rice around it to form a ball. Repeat this process until all the mixture is used.

Serve
Serve the arancini hot with warm marinara sauce for dipping.
