    Prepare the Grits

    In a pot, bring 4 cups of water to a boil. Add salt and slowly whisk in the grits. Reduce heat to low, cover, and simmer for about 20 minutes, stirring occasionally until creamy.

    Add Cheese to Grits

    Once the grits are cooked, stir in the cheddar cheese until melted and smooth. Keep warm.

    Cook the Shrimp

    In a skillet, heat the butter and olive oil over medium-high heat. Toss the shrimp with blackening seasoning, then add them to the skillet. Cook for about 2-3 minutes on each side, or until they are opaque and cooked through.

    Prepare the Lime Crema

    In a small bowl, mix sour cream with lime juice. Season with salt and black pepper to taste.

    Assemble the Dish

    In a serving bowl, spoon the cheesy grits, top with the blackened shrimp, add a spoonful of sofrito, and drizzle with lime crema. Serve immediately.
