Prepare the Parsnip Purée
In a medium saucepan, add the chopped parsnips and cover them with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the parsnips and return them to the pot. Add 2 tablespoons of butter, salt, and pepper to taste. Purée with an immersion blender until smooth. Set aside.

Roast the Kabocha Squash
Preheat the oven to 400°F (200°C). Toss the kabocha squash cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes or until golden brown and tender. Set aside.

Make the Sherry Gastrique
In a small saucepan, combine the sherry vinegar and sugar. Bring to a boil and reduce heat to a simmer. Cook until the mixture thickens, about 10 minutes. Set aside.

Seared Scallops
In a large skillet, heat olive oil over high heat. Season the scallops with salt and pepper. Once the oil is hot, add the scallops and sear for about 2-3 minutes on each side, until golden brown and cooked through. Remove from heat.

Plate the Dish
On a plate, spread a generous amount of parsnip purée. Arrange the seared scallops on top, add roasted kabocha squash and sautéed rapini. Drizzle with sherry gastrique before serving.
