Prepare the Ingredients
Start by dicing the apple and butternut squash, and halving the cipollini onions.

Cook the Gnocchi
Bring a pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float. Drain and set aside.

Sear the Salmon
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes, then flip and cook for an additional 3-4 minutes until the salmon is cooked through. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the cipollini onions and butternut squash, sautéing for about 5 minutes until they begin to soften. Then add the diced apple and sauté for another 3 minutes.

Add the Gnocchi and Season
Add the cooked gnocchi to the skillet with the vegetables. Pour in the apple cider vinegar, and season with salt, black pepper, and fresh thyme if using. Toss everything together and cook for another 2-3 minutes until heated through.

Plate the gnocchi and vegetable mixture, and top with the seared salmon. Enjoy!
