Roast the Beets
Preheat your oven to 400°F (200°C). Rinse and scrub the beets, then wrap each beet in aluminum foil and place them in a baking dish. Pour the coarse sea salt over the beets and seal the foil tightly. Roast for 45-60 minutes until tender. Let cool, then peel and slice.

Whip the Goat Cheese
In a mixing bowl, combine the goat cheese and heavy cream. Use a hand mixer or whisk to whip until smooth and creamy. Set aside.

Prepare the Salad
Thinly slice the apples and fennel. In a bowl, toss them together with olive oil, Dijon mustard, and orange juice. Season with salt and pepper to taste.

Toast the Pistachios
In a dry skillet over medium heat, toast the pistachios for about 5 minutes, stirring frequently until fragrant. Remove from heat and chop coarsely.

Assemble the Dish
On a serving platter, spread the whipped goat cheese, arrange the sliced roasted beets on top, and add the apple and fennel salad. Sprinkle toasted pistachios over the top for garnish.
