    Prepare the Farro

    In a medium saucepan, combine farro with 3 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low and simmer for about 30 minutes or until tender. Drain any excess water and set aside.

    Roast the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the kuri squash, pearl onions, and mushrooms. Season with salt and black pepper. Sauté until the vegetables are tender and caramelized, about 10-12 minutes. Add the kale and cook until wilted, about 2-3 minutes. Remove from heat.

    Cook the Salmon

    In a separate skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Season the salmon fillets with salt and black pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes on each side, or until cooked through and golden brown.

    Combine & Serve

    In a serving dish, layer the cooked farro, followed by the sautéed vegetables. Top with the pan-roasted salmon. Drizzle black garlic molasses over the top and sprinkle with pomegranate seeds before serving.
