    Make the Lamb Meatballs

    In a large mixing bowl, combine the ground lamb, bread crumbs, minced garlic, harissa paste, chopped parsley, egg, salt, and black pepper. Mix until well combined, but do not overmix.

    Shape the Meatballs

    Form the mixture into small meatballs, about the size of a golf ball, and place them on a tray.

    Fry the Shallots

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced shallots and fry until they are golden brown and crispy. Remove from the pan and set aside.

    Cook the Meatballs

    In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the meatballs in batches, making sure not to overcrowd the pan. Cook for about 5-7 minutes on each side, or until browned and cooked through.

    While the meatballs are cooking, you can prepare a simple herb oil by blending fresh herbs (like parsley, basil, or mint) with olive oil and a pinch of salt.

    Serve the crispy lamb meatballs drizzled with herb oil, topped with fried shallots, and accompanied by house-made tzatziki.
