    Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and stir to coat them in the fat.

    Cook the onions, stirring frequently, for about 30-40 minutes until they are deeply caramelized and golden brown. Reduce heat if they start to burn.

    Add Liquids and Seasonings

    Pour in the dry white wine and scrape the bottom of the pot to deglaze. Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a simmer.

    Simmer the Soup

    Let the soup simmer for at least 30 minutes to meld the flavors. Adjust seasoning to taste.

    Prepare the Croutons

    While the soup simmers, slice the French baguette into thick rounds. Toast the slices in the oven until golden brown.
