Poach the Eggs
Fill a pot with water and bring to a gentle simmer. Add a splash of vinegar (optional) to help the egg whites stay together. Crack each egg into a small bowl and gently slide them into the water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

Toast the Bread
While the eggs are poaching, toast the slices of sourdough bread until golden brown.

Assemble the Toast
Spread a generous amount of edamame hummus on each slice of toasted bread. Top with chopped artichoke hearts and roasted red peppers. Place a poached egg on top of each toast.

Finish and Serve
Sprinkle grated Parmesan cheese and fresh herbs over the top. Drizzle with herb oil if desired. Season with additional salt and pepper to taste. Serve immediately.
