Confit Chicken Wings

Method

Preparation and Cooking

  1. 1

    Prepare the Chicken Wings

Preheat your oven to 200°F (95°C). In a large mixing bowl, combine the chicken wings with salt, black pepper, and crushed garlic cloves. Mix well to coat the wings evenly.

  2. 2

    Combine Ingredients

In a large baking dish or Dutch oven, place the seasoned chicken wings. Add the olive oil and fresh thyme over the wings, ensuring they are submerged in oil.

  3. 3

    Confit the Wings

Cover the baking dish with aluminum foil and place it in the preheated oven. Cook for 2 to 2.5 hours, or until the wings are tender and the meat pulls away easily from the bone.

  4. 4

    Crisp the Wings

Once cooked, remove the wings from the oil and let them drain on a paper towel. To crisp them up, preheat a grill or broiler. Grill or broil the wings for about 5-7 minutes on each side until golden brown and crispy.

  5. 5

    Serve with Sauce

Toss the wings in your choice of Buffalo Sauce, Korean Barbecue, or Honey Mustard before serving. Serve with Pickled Carrot Celery Slaw on the side.
