    Prepare the Vegetables

    In a large pot, heat olive oil over medium heat. Add sliced fennel and minced garlic, sauté until soft, about 5 minutes.

    Add Tomatoes and Broth

    Stir in the diced tomatoes (with their juice) and fish stock or vegetable broth. Bring the mixture to a simmer.

    Add Seafood

    Add the clams, mussels, shrimp, and cod to the pot. Season with crushed red pepper flakes, salt, and black pepper. Cover and cook until the clams and mussels open, about 5-7 minutes.

    Add Roasted Potatoes

    Gently stir in the roasted potatoes and cook for an additional 2-3 minutes until heated through.

    Serve

    Ladle the cioppino into bowls and garnish with fresh parsley. Serve with lemon wedges on the side.
