Prepare the Biscuit Dough
Preheat your oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and chopped sage. Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Make a well in the center of the flour mixture and pour in the buttermilk. Stir gently until just combined. Turn the dough out onto a floured surface and knead gently 5-6 times. Pat the dough into a 1-inch thick circle and cut out biscuits using a round cutter.
