    Prepare the Steak

    Season the ribeye steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare doneness. Remove from skillet and let rest.

Crispy Brussels Sprouts

    Roast the Brussels Sprouts

    Preheat the oven to 200°C (400°F). Halve the Brussels sprouts and toss them with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes until crispy.

Maple Dijon Dressing

    Make the Dressing

    In a bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, and olive oil. Season with salt and pepper to taste.

French Fries

    Prepare the Fries

    Peel and cut potatoes into fries. Soak in cold water for 30 minutes. Heat vegetable oil in a deep fryer or large pot. Fry the potatoes in batches until golden brown, about 5-7 minutes. Drain on paper towels and season with salt.

Sauce Foyot

    Prepare Sauce Foyot

    In a saucepan, melt the butter and add the beef stock and white wine. Bring to a simmer. In a bowl, whisk the egg yolks and slowly add the hot stock mixture, stirring constantly. Return to heat and cook gently until thickened, without boiling. Season with salt and pepper.
