Method

Directions

  1. 1

    Preparation of Ingredients

Begin by preparing your ingredients. Cut the Fontina cheese into 1-inch cubes, ensuring that each piece is small enough to be wrapped in prosciutto. Rinse the fresh rosemary sprigs under cold water and pat dry with a paper towel.

  2. 2

    Wrapping the Cheese

Take one cube of Fontina cheese and wrap it with a slice of prosciutto, ensuring that the cheese is fully covered. Repeat this process for all the cheese cubes until you have 8 wrapped pieces.

  3. 3

    Assembling the Skewers

Take a wooden skewer and thread a wrapped cheese cube onto it. Follow with a sprig of fresh rosemary, then another wrapped cheese cube, and continue this pattern until the skewer is filled. Repeat with the remaining skewers.

  4. 4

    Prepping for Cooking

Brush each assembled skewer lightly with olive oil and sprinkle with freshly ground black pepper and sea salt to taste. This will add flavor and help achieve a nice char during cooking.

  5. 5

    Cooking the Skewers

Prepare your wood-fired grill. Once it is hot and ready, place the skewers on the grill. Cook for about 4-5 minutes per side, or until the prosciutto is crispy and the cheese is melted inside. Make sure to turn the skewers occasionally for even cooking.

  6. 6

    Serving

Once cooked, remove the skewers from the grill and allow them to cool slightly before serving. Serve warm as an appetizer or snack.
