For the soda (yields about 1 liter)
Simple syrup (rich, 2:1)
Caramel color / burnt sugar syrup
Cola flavor concentrate (makes ~30 ml)
Method

Combine 400 g granulated sugar and 200 ml water in a medium saucepan over medium heat.

Stir gently until the sugar dissolves, then bring to a gentle simmer. Do not boil vigorously; reduce heat if necessary.

Simmer for 5–7 minutes until slightly thickened. Remove from heat and let cool to room temperature.

Transfer to a clean bottle and refrigerate until needed.
Caramel color / burnt sugar syrup

Once the sugar melts and turns a deep amber (watch carefully to avoid burning), add 15 ml water very carefully — it will steam and bubble.

Stir briefly to incorporate and immediately remove from heat. Let cool to room temperature. This creates a dark syrup used for color and a touch of bitter caramel flavor.

If you prefer a milder color, use less caramel syrup; for darker color, increase gradually.
Cola flavor concentrate

Add 10 ml vodka to the oils and stir or shake to emulsify. Add 3 ml vanilla extract and mix well.

Allow the mixture to rest for at least 1 hour so flavors meld. Keep refrigerated when not in use. This makes approximately 30 ml of concentrate.
Assembling the Coca–Cola style soda

Chill 1 liter carbonated water thoroughly. Work with cold carbonated water to retain fizz.

In a large pitcher, combine 250 ml rich simple syrup and 15 ml caramel color syrup. Stir to mix.

Add 5 ml phosphoric acid solution (or 5 ml of a 5% citric acid solution if phosphoric is not available) and 0.5 tsp caffeine solution if using. Stir to incorporate.

Add 10 ml cola flavor concentrate to the syrup mixture and stir well.

Slowly pour 1 liter of chilled carbonated water into the pitcher while gently stirring to combine. Stir gently to avoid excessive loss of carbonation.

Taste and adjust: if too sweet, add a little more chilled carbonated water; if flat-flavored, add up to 1–2 ml more flavor concentrate; for darker color, add small additional amounts of caramel syrup.

Store any leftover soda in a sealed bottle in the refrigerator and consume within 2–3 days for best fizz and flavor.
