    Prepare potatoes

    Peel the Yukon Gold potatoes and cut them into uniform 1 to 1½-inch chunks so they cook evenly. Rinse the cut potatoes briefly under cold water to remove surface starch.

    Boil

    Place the cut potatoes in a large saucepan or pot and add enough cold water to cover by about 1 inch (approximately 1600 ml for 2 lbs potatoes). Add 2 tsp kosher salt. Bring to a gentle boil over high heat, then reduce to medium-high to maintain a steady simmer. Cook until potatoes are fork-tender, about 12–15 minutes depending on chunk size.

    Drain

    When a knife or fork slides easily into the center of the largest piece, drain the potatoes thoroughly in a colander for 1–2 minutes to remove excess water.

    Warm dairy

    While potatoes are boiling (or immediately after draining), warm the butter and milk together: place 6 tbs butter and 3 tbs milk in a small saucepan over low heat until butter melts and mixture is hot but not boiling. Alternatively, microwave in short bursts until warm. Add the 3 tbs sour cream to the warm mixture and whisk until smooth.

    Mash

    Return drained potatoes to the hot pot or place in a large bowl. Using a potato ricer for the creamiest texture, press potatoes through directly into the pot/bowl. If using a masher, mash until mostly smooth with small soft lumps remaining if desired.

    Incorporate dairy

    Pour the warm butter/milk/sour cream mixture over the mashed potatoes. Stir gently with a wooden spoon or rubber spatula until the mixture is fully incorporated and potatoes reach a smooth, creamy consistency. Avoid overworking to prevent gluey texture.

    Season

    Taste and add 1 tsp salt (or to taste) and 1/2 tsp freshly ground black pepper. Fold in the optional 2 tbs chopped chives if using. Adjust seasoning and texture: if potatoes seem too stiff, add additional warmed milk 1 tbsp at a time until desired consistency is reached.

    Serve

    Transfer Yukon mashed potatoes to a warmed serving bowl. Top with an extra pat (1 tbs) of butter or a drizzle of melted butter if desired and sprinkle a few extra chives. Serve immediately.
