1,000 Island Sauce

    Combine mayonnaise, ketchup, sweet pickle relish, vinegar, Worcestershire, sugar, salt and black pepper in a small bowl. Whisk until smooth and slightly chunky from the relish. Taste and adjust seasoning. Chill while preparing burger (can be made ahead and refrigerated up to 3 days).

    Slice red onion into 1/4-inch rings. Separate rings into half-moons if preferred. Heat 1 teaspoon oil in a small skillet over medium-high heat.

    Add onions and cook, stirring occasionally, 3–5 minutes until softened and edges are lightly browned and translucent. Remove from heat and set aside.

    Prepare lettuce leaf by patting dry and trimming to bun size if needed. Have pickle slices ready.

    Forming patties

    Divide ground beef into a single 6 oz portion for one patty (increase by 6 oz per additional patty for double/triple). Gently form into a 3.5–4 inch wide patty about 3/4 inch thick. Make a slight indentation in the center with your thumb to reduce puffing during cooking. Season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

    Cooking patty

    Heat a cast-iron skillet or griddle over medium-high heat until hot (about 3–4 minutes). Add a thin film of oil if pan is dry. Place patty in pan and cook undisturbed 3–4 minutes until a brown crust forms. Flip and immediately place American cheese slice on the cooked side. Cook another 2–3 minutes for medium; cook longer for desired doneness. If making a double or triple, cook patties in batches or keep finished patties warm on a low oven tray (200°F / 95°C) while finishing others.

    Toasting bun & assembly

    While the patty finishes, butter the cut sides of the bun and toast in a skillet or on the griddle until golden, about 1–2 minutes. Place the toasted bottom bun on a plate, spread 1–2 tablespoons of 1,000 Island sauce on the bottom bun. Lay down the lettuce leaf, then the hot cheeseburger patty (cheese side up). Top with grilled red onion and 3 pickle slices. Spread 1 tablespoon of 1,000 Island on the top bun and place on the burger. Serve immediately.
