Preheat and prepare
Preheat oven to 220°C (425°F). Line two large baking sheets with parchment paper or lightly grease them so fries won't stick.

Wash and cut
Wash and scrub the sweet potatoes; leave skins on for texture and nutrients. Cut the ends off to create flat surfaces. Using a mandoline with a waffle or crinkle-cut blade (or a crinkle cutter plus careful rotation), slice the sweet potato crosswise in even passes: slice once, rotate 90 degrees, slice again to create the waffle pattern. Work quickly to keep slices uniform, about 1/4 inch (6 mm) thick. Transfer each slice to a bowl as you go.

Dry and toss
Pat the waffle-cut sweet potato slices dry with a clean kitchen towel or paper towels to remove surface moisture. Place them in a large bowl. Sprinkle cornstarch over the slices and toss to coat evenly; this helps crisping. Add olive oil and toss to coat each piece lightly and evenly.

Season
In a small bowl, combine smoked paprika, garlic powder, onion powder, ground cumin, kosher salt, black pepper, and cayenne. Sprinkle the spice mix over the oiled sweet potato slices and toss gently until all pieces are evenly seasoned.

Arrange and space
Spread the seasoned waffle fries in a single layer on the prepared baking sheets, spacing them so they do not touch; overcrowding will produce soggy fries. If you have two sheets, rotate them halfway through baking for even color.

Bake
Bake in the preheated oven for 12 minutes. After 12 minutes, flip each waffle fry carefully with tongs or a spatula, then continue baking another 8–12 minutes until edges are crisp and browned in spots and centers are tender. Total baking time will be 20–24 minutes depending on oven and thickness. For extra crispness, finish under the broiler for 1–2 minutes watching closely to avoid burning.

Rest and garnish
Remove fries from the oven and let them rest on a rack or paper towel for 2–3 minutes to allow steam to escape and crisp up. Taste and adjust salt if needed. Sprinkle chopped fresh parsley over the fries if using.
