Cocktail Preparation
- 1
Build & Shake
In a cocktail shaker, add 1.5 oz Stoli Vanilla Vodka, 0.75 oz Chinola liqueur, 0.5 oz fresh passion fruit juice (or purée), 0.25 oz fresh lime juice and 0.25 oz simple syrup. Add a generous scoop of ice (about 1 cup). Cap the shaker and shake vigorously for 12–15 seconds until well-chilled and slightly frothy.
- 2
Strain
Double-strain the shaken liquid into a chilled coupe or flute using a Hawthorne and fine mesh strainer to remove ice shards and fruit solids. Leave room for the sparkling wine.
- 3
Top with Sparkling Wine
Gently top the cocktail with 2 oz chilled sparkling wine (Brut or Extra Dry). Pour slowly to maintain effervescence and avoid overflow.
- 4
Add Passion Fruit Pearls
Spoon about 1 tablespoon of passion fruit pearls into the bottom of the glass before or after topping with sparkling wine. If added after, spoon carefully to preserve bubbles. The pearls will sit in the drink and provide bursts of passion fruit flavor.
- 5
Garnish & Serve
Garnish with half a passion fruit or a passion fruit wheel on the rim and an optional mint sprig. Serve immediately while the sparkling wine is lively.
Notes & Variations
- 6
If Chinola liqueur is not available, substitute with another passion fruit liqueur or 0.5 oz passion fruit purée + 0.25 oz additional simple syrup to approximate sweetness and body. Adjust lime to taste.
- 7
For a less-sweet version, reduce simple syrup to 0.125 oz and/or use a drier sparkling wine.
- 8
To make passion fruit pearls (spherification) at home requires molecular gastronomy equipment; popping boba is a straightforward alternative available from specialty stores.
