Crack and combine
Crack the 4 large eggs into a medium bowl. Add 2 tablespoons whole milk. Sprinkle in 1 teaspoon salt and 1 teaspoon freshly ground black pepper.

Heat pan and fat
Place a nonstick or well-seasoned 8–10 inch skillet over medium-low heat. Add 1 tablespoon unsalted butter and 1 teaspoon olive oil (if using). Allow the butter to melt and foam but not brown—about 30–60 seconds.

Scrape and fold
Using a silicone spatula, gently push the eggs from the edges toward the center, forming large soft curds. Tilt the pan as needed and continue to gently push and fold the eggs every 10–15 seconds. Maintain low to medium-low heat so they cook slowly and remain creamy. Total cooking time should be about 2–4 minutes depending on desired doneness.

Add cheese and herbs
If using, sprinkle 2 tablespoons grated cheese over the eggs and fold once to melt. Transfer the scrambled eggs to a serving plate and garnish with 1 tablespoon chopped fresh chives or parsley.
