    Chill glass

    Place a martini (coupe) glass in the freezer or fill it with ice water to chill while preparing the cocktail.

    Dry shake (emulsify)

    In a cocktail shaker add vodka, lemon liqueur, fresh lemon juice, simple syrup and 1 large egg white. Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify and create foam.

    Wet shake (cool and aerate)

    Add ice to the shaker (about 1 cup) and shake again hard for 15–20 seconds until the shaker is cold to the touch and the mixture is frothy and chilled.

    Double strain

    Remove the chilled glass from the freezer. Strain the cocktail through a fine-mesh strainer into the chilled martini/coupe glass to remove ice shards and ensure a silky texture.

Meringue Topping (Torch or Torchless)

    Make a quick meringue

    In a clean bowl, combine 1 egg white (or pasteurized egg white) with 2 tsp granulated sugar and 1 tsp vanilla extract. Whisk vigorously by hand or with an electric whisk until soft peaks form and the mixture is glossy. This should take 1–2 minutes with an electric whisk; longer by hand.

    Top the cocktail

    Spoon or pipe a generous dollop of the meringue onto the surface of the strained martini, creating an even layer about 1/2 inch thick.

    Finish (torch or broil)

    If you have a kitchen torch: gently torch the meringue surface until golden brown in spots, rotating for even color (about 10–20 seconds). If you don't have a torch: place the glass briefly under a very hot oven broiler for 10–20 seconds on the top rack (watch closely and use an oven-safe vessel or transfer meringue to a small ovenproof dish and broil). Alternatively, serve the meringue un-toasted for a softer presentation.

    Garnish

    Finish with a light dusting of lemon zest over the torched meringue and place a lemon twist or small wheel on the rim or floating on the meringue. Optionally, rim the glass beforehand with a little lemon juice and superfine sugar for a sweet edge.
