    If claws are frozen, thaw in the refrigerator overnight or under cold running water until pliable. Rinse claws under cold water and pat dry. Crack the largest claw knuckles lightly with the back of a chef's knife or a mallet to allow the poaching liquid to penetrate and make meat easier to access after cooking.

    Zest the lemon and reserve. Quarter the lemon and squeeze one wedge for juice. Smash the garlic cloves and quarter the onion (or slice shallots).

Poaching & Cooking

    In a large skillet or shallow saucepan just big enough to hold the crab claws in a single layer, combine 4 cups water, 1 cup dry white wine, 1 tsp kosher salt, 1 bay leaf, 1 tsp whole peppercorns, smashed garlic, quartered onion, and the lemon half used for zest (squeezed). Bring the mixture to a gentle simmer over medium heat.

    Once simmering, add the Jonah crab claws in a single layer. Reduce heat to maintain a gentle simmer (small bubbles). Poach the claws until the shells turn bright and the meat is opaque and heated through, about 6–8 minutes for 1 lb of medium claws. Avoid boiling vigorously to keep meat tender.

    With tongs, remove the claws to a plate to rest for 2 minutes. Reserve the poaching liquid.

Herb Butter Dipping Sauce

    While claws rest, melt 6 tbsp unsalted butter in a small saucepan over low heat or in a microwave-safe bowl (30–45 seconds). Add 2 tbsp chopped parsley, 1 tbsp chopped chives, 1 tsp lemon juice, 1/2 tsp lemon zest, 1/4 tsp salt, and 1/4 tsp freshly ground black pepper. Stir until combined and warm. Keep warm on the lowest heat setting or in a thermos to serve.

    Optional: For extra flavor, take 1/4 cup of the reserved poaching liquid, bring it to a simmer, and whisk a tablespoon into the melted butter before adding herbs to incorporate a subtle briny, aromatic note.
