Sanitize
Sanitize all fermentation equipment (carboy or fermenter, airlock, siphon, funnel, spoons, bottles) with a no-rinse sanitizer to prevent contamination.

Crush the 1/2 campden tablet into a fine powder and dissolve into about 50 ml of the cider/water to sanitize wild yeast and bacteria in the fresh-pressed cider.

Combine the cider and the filtered water in the primary fermenter (approximate total volume 2.0 liters).

Stabilize and Clarify
After dissolving the crushed campden, cover the fermenter and let sit for 24 hours to allow sulfite to work and reduce wild microflora.

Add Pectic Enzyme
After the 24-hour rest, add the pectic enzyme (1 tsp) to the cider and stir gently to reduce haze and aid clarification during/after fermentation.

Add Sugars
Dissolve the granulated sugar (150 g) and optional cane sugar (50 g) in a small pot with 200 ml of the cider/water mixture over low heat until fully dissolved. Cool the sugar syrup to room temperature and add back into the fermenter, stirring gently to combine. This increasing of fermentable sugars targets a semi-sweet final gravity while providing fermentable body.

Rehydrate Yeast
If using dry yeast, rehydrate according to manufacturer instructions in 30-50 ml of warm (not hot) water at ~35-40°C for 10 minutes. Add yeast nutrient (1 tsp) to the must when pitching.

Once the sugar syrup is cool and the must is at room temperature (18–22°C), pitch the rehydrated yeast into the fermenter and stir gently to aerate for the yeast's initial growth.
Primary Fermentation

Ferment
Fit the fermenter with an airlock and let ferment at a stable temperature of 16–20°C. Active fermentation should begin within 24–48 hours and typically lasts 5–10 days for the vigorous phase. Monitor specific gravity if you have a hydrometer; target a semi-sweet finish by stopping around a gravity you prefer (example finish ~1.008–1.015 depending on sweetness desired).

After the initial vigorous activity subsides (bubbles slow), rack (siphon) the cider off the lees (sediment) into a clean secondary carboy, leaving sediment behind.
Secondary Conditioning & Flavoring

Add Flavorings
Add the thinly sliced fresh ginger (15 g), orange zest (1 tbs), 4 whole allspice berries and 3 whole cloves to the secondary carboy with the racked cider. These amounts give a subtle, warming spice character typical of Duluth-style cider. If you prefer stronger spice, increase ginger to 25 g or cloves/allspice by 50%.

Condition in secondary at 12–15°C for 7–14 days to allow flavors to meld. Taste periodically; when spice intensity and clarity are satisfactory, proceed to final steps.
Stabilizing, Sweetening & Bottling

Optional Stabilize
If you want to ensure fermentation stops and preserve residual sweetness, add potassium sorbate (per manufacturer dosing) plus a campden tablet equivalent after fermentation is complete and gravity is stable. Note: do not add sorbate before fermentation is done or it will not stop fermentation on its own.

Prepare for Bottling
If bottling with light carbonation, dissolve priming sugar (10 g dextrose) in 50 ml boiling water, cool, and gently mix into the bulk cider in a sanitized bottling bucket. If you prefer still cider, skip priming sugar and bottle directly or keg without priming.
