In a shallow wide bowl or rimmed baking sheet, whisk together the all-purpose flour, cornstarch, paprika, cayenne, garlic powder, onion powder, dried oregano, kosher salt, and black pepper until evenly combined.

Remove chicken from the marinade, letting excess buttermilk drip back into the bowl. Working in batches, dredge each piece first in the seasoned flour, then dip into the egg wash, then back into the flour for a double-coat. Press the flour onto the chicken to ensure good adhesion.
