    Bring steak to room temperature

    Remove the cowboy ribeye from the refrigerator 45–60 minutes before cooking so the interior comes closer to room temperature. Pat the steak dry on all sides with paper towels.

    Season

    Generously season both sides and the exposed bone edge with kosher salt, coarse black pepper, garlic powder, and onion powder. Press seasonings into the meat so they adhere.

    Preheat cast-iron and oven

    Preheat your oven to 400°F (205°C). Place a 10–12 inch cast-iron skillet on the stovetop and heat it over high heat until smoking lightly, about 5–7 minutes. Add the neutral oil and swirl to coat; it should shimmer but not excessively smoke.

    Sear the steak

    Carefully place the ribeye in the hot skillet, steak away from you to avoid splatter. Sear without moving for 2.5–3 minutes until a deep brown crust forms. Flip and sear the other side for 2–3 minutes. Sear the exposed bone edge by holding the steak with tongs and pressing the bone against the pan for 30–45 seconds to render any fat and crisp the edge.

    Baste and finish in oven

    Reduce heat to medium-low. Add the unsalted butter, thyme sprigs, and crushed garlic to the skillet. As the butter melts, tip the pan slightly and spoon the melted butter, garlic and thyme over the steak continuously for 30–60 seconds to infuse flavor. Transfer the entire skillet to the preheated 400°F oven to finish cooking. Roast until the internal temperature reaches your target: 120–125°F for rare, 130–135°F for medium-rare, 140–145°F for medium. For a 1–1.5 lb cowboy ribeye expect 6–12 minutes in the oven depending on thickness.

    Rest the steak

    Remove skillet from the oven and transfer the steak to a cutting board. Tent loosely with foil and rest for 10–15 minutes. Resting allows juices to redistribute and carries the steak to its final temperature (carryover will be about 5°F).

Finishing & serving

    Slice and finish

    Slice the steak against the grain into thick slices. Sprinkle with flaky sea salt to taste. If using, place a dollop of compound butter on top so it melts over the warm meat or serve with steak sauce or chimichurri on the side.

    Serve the cowboy ribeye immediately with roasted vegetables, smashed potatoes, or a simple salad. Pass any additional finishing salt or sauce at the table.
