    Prepare cured meats

    Remove all cured meats from refrigeration about 20–30 minutes before serving so they come to near room temperature — this brings out flavor and aroma.

    Fan or fold the prosciutto slices into loose ribbons or rosettes (8–10 slices). For other meats (soppressata, coppa, chorizo, mortadella), fold each slice in half or into thirds and arrange in small piles across the board to make them easy to grab and visually appealing.

    If any slices are large (mortadella or coppa), cut into 2–3 bite-sized pieces to encourage sharing.

Accompaniments — cheeses & spreads

    Bring cheeses to temperature & prepare spreads

    Take cheeses from the fridge 20–30 minutes ahead so soft cheeses are spreadable and flavors are open. Slice the semi-firm and firm cheeses into thin wedges or bite-sized cubes. Leave the soft cheese whole or in a wedge with a small knife for spreading.

    Spoon the whole-grain mustard into a small bowl. Spoon the jam or chutney into another small bowl. Place a small dish of honey and a small spoon beside the soft cheese for drizzling.

    Slice the baguette on a diagonal into 1/2-inch (1 cm) slices, toast lightly if desired (200°C / 400°F for 5–7 minutes) to add crunch. Arrange slices, crackers and grissini in small stacks or scattered groups to create texture contrast.

    Drain cornichons and olives, pat dry, and place in small bowls if preferred. Arrange roasted nuts in a small pile or dish. Scatter grapes or fig halves in clusters around the board to add freshness and sweetness.

Garnish & finishing

    Drizzle the olive oil lightly over the firm cheese chunks or into the olive bowl if they are plain. Grind the black pepper over the soft cheese or prosciutto as desired. Zest a little lemon over the fresh fruit or cheese for brightness if using.

    Assemble: On a large serving board or platter, place cheeses first in separate areas, then tuck folded meat selections around and between cheeses. Add bowls of mustard, jam, pickles and olives. Fill gaps with crackers, bread slices, nuts and fruit. Garnish with herb sprigs for color.
