Method
Prepare Cheeses

Temperature & rest
Remove all cheeses from the refrigerator 30–60 minutes before serving so they come to room temperature. This improves aroma and texture; softer cheeses should be removed closer to 30 minutes, harder cheeses up to 60 minutes.

Cheddar and Manchego
Cut the aged cheddar into a mix of bite-size cubes and a few thin slices for variety (approx. 1–2 cm cubes and 3–4 mm slices). Slice the Manchego into 0.5 cm wedges or thin triangles. Arrange on the board with space around each cheese for easy access.

Brie
Leave the Brie whole or in a large wedge. If whole, score the rind in a shallow crosshatch on top to make spreading easier. Place it with a small cheese knife for guests to slice or spread.

Blue cheese
Crumble or cut the blue cheese into small chunks and place in a small bowl or on the board. Keep a separate small knife or spoon to prevent flavor crossover.

Goat cheese
Leave the chevre as a whole log or form it into small quenelles with a spoon. Optionally drizzle a little olive oil and crack some black pepper over the top.

Bread & crackers
Slice the baguette on a slight diagonal into 1 cm-thick slices and toast lightly until golden (about 5–7 minutes at 180°C / 350°F) or serve untoasted. Fan crackers in small stacks around the cheeses.

Fresh & dried fruits
Rinse and dry grapes and arrange in small clusters. Quarter figs or pears and fan them near soft cheeses. Place dried apricots in a small pile to balance salty cheeses.

Nuts & spreads
If using raw almonds and you prefer warmed nuts, toast them in a dry skillet over medium heat for 3–4 minutes until fragrant, stirring constantly. Transfer to a small bowl. Spoon honey into a small ramekin and place fig jam or quince paste with a spreader nearby.
Assemble & Garnish

Select a wooden board or large platter. Place cheeses spaced apart so guests can approach each one without crossing flavors. Use small bowls for runny or crumbly items (blue cheese, honey).

Arrange accompaniments around the cheeses: baguette and crackers on one side, fruits on another, nuts and spreads in between. Add rosemary or thyme sprigs for aroma and visual appeal.

Drizzle 1 teaspoon of olive oil over the goat cheese if desired and finish with a light crack of black pepper over the Brie or goat cheese. Provide separate knives/spreaders for each cheese to avoid flavor mixing.
