    Chill glass

    Place a rocks glass in the freezer or fill it with ice and cold water while you prepare the cocktail to chill it. Set aside.

    Combine ingredients

    In a mixing glass, add 2 oz bourbon, 0.75 oz sweet vermouth, 0.25 oz amaro, 2 dashes Angostura bitters, 1 dash orange bitters, and 0.25 tsp simple syrup (optional).

    Add ice and stir

    Fill the mixing glass with large ice cubes (about 3–4 cubes). Using a bar spoon, stir gently but thoroughly for 25–30 seconds until the mixture is well chilled and slightly diluted (mixing glass should sweat lightly). Stirring rather than shaking preserves clarity and mouthfeel.

    Prepare glass

    Discard the chilling ice/water from the rocks glass and add one large clear ice cube or a few fresh large cubes to the glass.

    Strain

    Using a Hawthorne or julep strainer, strain the mixed cocktail into the prepared rocks glass over the fresh ice.

    Garnish and finish

    Express the oils of an orange peel over the surface by holding the peel with the outside facing down, giving it a firm snap to release the oils. Run the peel around the rim of the glass and drop it into the drink as garnish. Optional: add a final small dash of Angostura on the top for aroma.

    Rinse and dry bar tools after use. Return unused bottles to cool, dark storage. Serve immediately.
