Prep the wings
If wings are whole, separate into flats and drumettes by cutting at the joint; discard tips or save for stock. Pat wings very dry with paper towels — dryness is key to crisp skin. Place wings in a large bowl or rimmed baking sheet. Sprinkle the kosher salt and black pepper over the wings and toss or rub to distribute evenly.

Let the salted wings rest uncovered in the refrigerator for 30–60 minutes if time allows. This helps draw moisture from the skin for crisper results. If short on time, proceed immediately after salting.

Make the rub
In a small bowl, combine paprika, brown sugar, garlic powder, onion powder, ground cumin, chili powder, cayenne pepper, dry mustard, and smoked salt (if using). Whisk thoroughly until uniform. Taste a tiny pinch (optional) to confirm balance — adjust cayenne or brown sugar to taste for more heat or sweetness.

Apply rub to wings
Lightly coat the wings with the neutral oil to help the rub adhere: drizzle the oil over wings and toss until evenly coated. Sprinkle the Boss Lady Wikid Wing Rub over the wings in batches, tossing or rubbing with your hands to ensure an even, thin coating on every piece.

Oven method (preferred for full/half pan consistency)
Preheat oven to 425°F (220°C). Line a full sheet pan or 1/2 pan with foil and place a wire rack on the pan. Arrange wings in a single layer on the rack, leaving slight space between pieces for air circulation. Bake for 25 minutes, then flip wings and bake another 15–20 minutes until skin is deeply golden and internal temperature reaches 165°F (74°C) and skin is crisp. For extra crispness, broil on high for 2–3 minutes, watching carefully to avoid burning.

Alternative: Convection oven or deep fryer
If using a convection oven, reduce temperature to 400°F (200°C) and check at 20 minutes, flipping once. For deep frying, heat oil to 350°F (175°C) and fry wings in batches for 8–10 minutes until golden and cooked through, then toss with rub immediately after draining.

Finish and serve
Transfer cooked wings to a clean tray. If desired, squeeze fresh lime wedges over the wings and toss gently to distribute citrus brightness. Sprinkle with chopped parsley or cilantro for color. Serve hot with ranch or blue cheese dressing on the side.
