Preparation

Peeling the Plantains

Cut the ends off the green plantains, and make a lengthwise slit through the peel without cutting into the flesh. Carefully peel the plantains to remove the skin.

Cutting the Plantains

Slice the peeled plantains into 1-inch thick pieces and set aside.

Frying

First Frying

In a deep skillet or frying pan, heat vegetable oil over medium heat. Once hot, add the sliced plantains in batches, frying for about 3-4 minutes until they are lightly golden and soft. Remove and drain on paper towels.

Flattening the Plantains

Using the bottom of a flat plate or a tostonera (plantain press), gently flatten each fried plantain slice to about half an inch thick.

Second Frying

Return the flattened plantains to the hot oil and fry again for another 2-3 minutes until they are crispy and golden brown. Remove and drain on paper towels again.

Serving

Seasoning and Serving

Sprinkle the hot tostones with salt and garlic powder. Serve immediately with lime wedges on the side. Optionally, mix mayonnaise, ketchup, and hot sauce for a dipping sauce.
