    In a blender, combine the pineapple juice, white vinegar, achiote paste, garlic cloves, cumin, oregano, salt, black pepper, and chili powder. Blend until smooth.

    Cut the pork shoulder into small chunks and place them in a large bowl. Pour the marinade over the pork, ensuring all pieces are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking and Assembly

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 20-25 minutes, turning occasionally, until the pork is cooked through and slightly charred on the edges.

    Once the pork is cooked, let it rest for a few minutes before slicing it thinly. Warm the corn tortillas on the grill or in a pan.
