1. Prepare the potatoes

Peel the potatoes and cut them into thick fries. Rinse them under cold water to remove excess starch, then pat them dry with a paper towel.

2. Prepare the hot dogs

Slice the hot dogs into bite-sized pieces or quarters, depending on your preference.

3. Fry the potatoes

Heat the cooking oil in a deep frying pan or fryer over medium-high heat. Once hot, carefully add the potato fries in batches to avoid overcrowding. Fry them until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt to taste.

4. Fry the hot dogs

In the same hot oil, add the sliced hot dogs and fry until they are browned and slightly crispy, about 3-4 minutes. Remove and drain on paper towels.

5. Mix the ingredients

In a mixing bowl, combine the mayonnaise, ketchup, hot sauce, garlic powder, paprika, and salt. Mix well until smooth. Adjust the seasoning according to taste.

Serving

6. Assemble your Salchipapas

On a plate, layer the crispy fries and top them with the fried hot dogs. Drizzle the prepared fry sauce generously over the top. Optionally, garnish with fresh cilantro, chopped onions, and sliced jalapeños before serving.
