Method

Chorizo Preparation

  1. 1

    Cook the Chorizo

In a skillet over medium heat, add the olive oil and allow it to warm. Crumble the chorizo into the skillet and cook for about 5-7 minutes, stirring occasionally, until it is browned and cooked through. Remove from heat and set aside.

Cheese Mixture

  1. 2

    Prepare the Cheese

In a large mixing bowl, combine the Chihuahua cheese, Monterey Jack cheese, and cream cheese. Mix well until all the cheeses are evenly distributed.

Combine and Melt

  1. 3

    Melt the Cheese

In the same skillet used for the chorizo, add the cheese mixture. Cook over low heat, stirring frequently until the cheeses are melted and creamy, about 5-10 minutes. Stir in the cooked chorizo and mix thoroughly.

Serving

  1. 4

    Prepare the Tortillas

While the cheese is melting, warm the corn tortillas in a separate skillet or on a grill until they are soft and pliable, about 1-2 minutes on each side.

  2. 5

    Serve

Transfer the queso fundido to a serving dish. Garnish with cilantro and serve hot with warm tortillas and a side of sour cream.
