Pork Preparation

Prepare the Marinade
In a small bowl, mix together the cumin, smoked paprika, salt, black pepper, lime juice, and olive oil. This will be the marinade for the pork.

Season the Pork
Rub the marinade all over the pork shoulder. Make sure it is evenly coated.

Add Onions and Garlic
In the slow cooker, place the chopped onions and minced garlic at the bottom. Then, place the seasoned pork shoulder on top of the onions and garlic.

Slow Cook the Pork
Cover the slow cooker and set it on low for 8 hours or high for 4 hours, until the pork is tender and easily shreds with a fork.

Shred the Pork
Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the onions and juices.

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until they are pliable.

Assemble the Tacos
To assemble, place a generous portion of the shredded pork onto each tortilla. Top with chopped cilantro, and if desired, add sour cream and salsa.

Serve
Serve the tacos with lime wedges on the side for squeezing over the top.
