Preparing the Pork Ribs

Season the Pork

In a bowl, combine the garlic (minced), cumin, paprika, salt, and black pepper. Rub this mixture over the boneless pork ribs evenly.

Sear the Pork

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the seasoned pork ribs and sear them on all sides until browned, about 5-7 minutes.

Braised Cooking

Add the chicken broth to the pot, cover, and reduce the heat to low. Allow the pork to braise for 2-3 hours, or until tender and easily shredded.

Prepare the Vegetables

Finely slice the red onion and grate the carrots. Combine them in a bowl.

Add chopped cilantro, lime juice, and salt to the bowl. Mix well and let it sit for at least 30 minutes to allow the flavors to meld.

Making the Guava & Cream Cheese Sauce

Blend the Sauce

In a blender, combine guava paste, cream cheese, and milk. Blend until smooth and creamy. Adjust consistency with more milk if needed.

Shred the Pork

Once the pork is cooked and tender, remove it from the pot and shred it using two forks.

Slice the sandwich rolls in half. Layer shredded pork, top with the onion and carrot relish, and drizzle the guava cream cheese sauce over it.
