Pork Preparation

Sear the Pork

Heat olive oil in a large pot over medium-high heat. Season the pork ribs with salt, black pepper, cumin, and paprika. Sear the pork on all sides until browned, about 5-7 minutes.

Add Garlic and Broth

Add minced garlic to the pot, stirring for about 1 minute until fragrant. Pour in the chicken broth, ensuring the pork is mostly submerged.

Braised Cooking

Bring to a simmer, cover, and reduce heat to low. Braise the pork for about 2-3 hours until tender, turning occasionally.

Shred the Pork

Once the pork is tender, remove it from the pot. Let it rest for a few minutes, then shred using two forks.

Prepare Vegetables

Thinly slice the red onion and julienne the carrots.

Make the Pickling Liquid

In a medium saucepan, combine vinegar, sugar, salt, and black pepper. Bring to a simmer over medium heat, stirring until sugar dissolves.

Pickle the Vegetables

Add the sliced onion and carrots to the simmering liquid. Remove from heat and let it cool for at least 30 minutes to pickle.

Prepare the Bread Rolls

Slice the bread rolls in half and toast lightly if desired.

Layer shredded pork onto the bottom half of each roll, followed by a generous amount of onion and carrot relish. Top with fresh cilantro and slices of avocado.
